Watermelon Gazpacho with Crab

Serves 6
Preparation time: 30 minutes plus chill time of 2 hours to over night

Ingredients:

6 cups diced seedless watermelon
1 small cucumber, peeled, seeded, diced (about 1 cup)
1 small red bell pepper, seeded, diced (about 1/2 cup)
1 small yellow bell pepper, seeded, diced (about 1/2 cup)
3 pale green inner celery stalks, diced (about 1/2 cup)
1/2 cup scallion, diced
2 cloves garlic, smashed
1/2 cup finely chopped fresh cilantro
juice of 1/2 a fresh lime
1/4 teaspoon salt
tobasco to taste (optional)
tbsp silver tequila (optional)

1 lb. jumbo lump crab meat, cleaned
Fresh cilantro for garnish

To Prepare:

Blend all ingredients in a blender, except the crab and garnish, till smooth. Chill for at least 2 hours or over night.

To serve, pour the chilled soup into 6 bowls and place a clump of crab in the center and garnish with cilantro.
